Copain is a small-production house working cool-climate sites for Chardonnay, Pinot Noir and Syrah, and the tasting is built to show one vineyard against another.1 Every tasting starts with a splash and a bite to pair before the flight proper.1 The setting is the pitch as much as the wine: the winery calls it peaceful and intimate, and it takes children and leashed dogs, which narrows the field around here considerably.1
