Abby Jane Bakeshop
The heritage grain is milled next door at Barton Springs Mill and goes straight into the bread, the pastry and the wood-fired pizza dough.2
Why go
Abby Jane Love opened this on 21 January 2021, in the mill's own building. She came to it from Qui, Vespaio and Dai Due.2 Those are Austin kitchens that buy carefully. Here she has moved one step further back down the chain. The bread side runs to olive and seed-studded sourdoughs and a whole-grain pumpernickel.2 The case rotates, and the croissants come out flaky.1 They also teach pizza making and an introduction to sourdough, next door in the mill.3
Order this / avoid
- Order a sourdough pizza, loaded with sumac vegetables or with pepperoni curled into cups.1
- Take a croissant and an apple danish off the case.1
- Carry home a loaf, the olive and seed sourdough or the whole-grain pumpernickel.2
- Avoid: making the drive for a coffee alone. Treaty Oak Distilling sits right behind it, and the two together make the morning pay.1
What locals & experts say
- Anne Cruz covered it for The Infatuation in Where To Eat & Drink In Dripping Springs, page dated 6 October 2023:
Abby Jane Bakeshop is attached to the local grain mill, because of course there's a local grain mill in Dripping Springs.
She namessuper flaky croissants and wonderful sourdough pizzas loaded up with sumac veggies or beautifully curled cups of pepperoni.
The outlet gives it no number.1 - CultureMap Austin reported the opening on 15 January 2021 and named both the chef and the mill.2
Good to know
- This is a day trip, not an Austin stop. Dripping Springs sits roughly 40 km west of the city, on Fitzhugh Road.
- Hygiene: nothing found, and it is not clear which authority would hold anything. Whether 16604 Fitzhugh Rd falls in Travis or Hays County is unsettled, so this is neither a clean inspection nor a jurisdiction ruling.4
Verdict
should-visit — Go in the morning and go west, because this is the first stop of a Hill Country day and not an errand. Leave with bread, because the mill next door is the whole reason to drive here. Take the pizza if you are two people and the pastry if you are one. Book one of the classes in the mill if you care how the flour behaves.
