Why go
The bar came out of the Here Nor There and In Plain Sight team. It opened in 2025 in the basement of the Tiger Lilly event venue.3 Tiger Lilly closed in late March 2026, and Terance Robson and Jack Hogan moved Bar Hacienda into its own room on Rainey Street.4 The house framing is Latin American. What the menu shows is a clarification and fat-washing program. Citrus is clarified for the highball so the drink stays clear under soda. Tomatillo water is clarified for the vodka martini. Cacao butter is washed into Jameson Black Barrel for the old fashioned, which is how chocolate gets into a stirred drink without weighing it down.2
Order this / avoid
- Order the Hacienda Highball, the house drink and the clearest version of the technique, then the Caragigilo if you want miso and spent coffee in a reposado drink.2
- Avoid: assuming tropical means sweet. Verjus turns up in four drinks on the list, and togarashi, miso and salt in three more.2
