She spent five years in San Antonio as the Culinary Institute of America's Mexican cuisine specialist, opened a trailer on Rainey Street in 2010 and a brick-and-mortar there in 2012, and moved to South Lamar in 2019 when the rent stopped working.

What she built here was a kitchen that named its region and its technique: house-nixtamalized corn tortillas, traditional moles, and a menu that changed constantly around a few fixtures.1 Her own measure of the place was a refusal. A friend told her before the Austin opening that she would have chips and salsa on the menu inside two weeks. We still don't have it.
