Why go
Tyson Cole opened this room in 2003 in a converted house on South Lamar that had been a French restaurant called Si Bon. Uchi is Japanese for house.2 He spent a decade getting there: waiting tables at a Japanese restaurant on Congress Avenue in 1992. Then he spent a year and a half making sushi in the kitchen, where customers could not see him. Then came almost eight years at Musashino under Takehiko Fuse, the chef he calls his first sensei.2 His aim for the place, in his own words, was to take the idea of that combination of hot food and cold food together and translate it into a restaurant,
which is why two tight pages run from crudos and carpaccios to grilled branzino and pork belly.21
Order this / avoid
- 72-hour short rib nigiri. It comes crisp on the outside, then collapses into something closer to beef butter. It is the argument for ordering off the non-fish side of the nigiri list.1
- Machi cure. Thin yuca crisps stacked with smoked yellowtail, marcona almonds and Asian pear, built into composed bites before it reaches you.1
- Hama chili. Thick slices of yellowtail in spicy, tangy ponzu with orange wedges cutting it.1
- From the Toyosu section, whatever is running: aji, bluefin otoro, Hokkaido uni. The fish flies in from the Tokyo market twice a week and the selection changes.1
- Avoid: the hot rock, if the A-5 label is why you want it. McCrary writes that the meat is not as tender as that grade implies. It still eats well.1

- Hygiene: clean. Austin Public Health scores the kitchen at 801 S Lamar 86 on 13 November 2025 and 85 on 27 June 2024. The city's failing line is 70.4
Verdict
should-visit — Reservations open a month out and the prime times go as they are released, so a bar seat at opening is the honest route in. Budget 150 to 200 dollars a head for the omakase, and less if you come early enough to land in happy hour. Ordering a la carte costs you nothing here.
