Tsuke Edomae
Michael Che flies to Tokyo every week, buys his own fish at Toyosu, butchers it at his teacher's restaurant and is back behind eight seats in Mueller for service that day.5 Matthew Odam rated the room 9.5 out of 10 and calls it his favorite sushi in Texas.4
Why go
Che grew up in California, moved to Austin as a child and spent nearly a decade in sushi rooms serving a couple of hundred people a night.4 Then he ate Otto Phan's omakase at Kyoten Sushiko and sat in his car afterwards in tears. His own account of it: Otto's sushi was so orthodox and pure. It shocked me how good it could be with just four ingredients: rice, wasabi, fish, and soy sauce.
64 When Phan closed the Mueller room, he handed the lease to Che.4 Edomae cooks cure and age their fish, and Che varies the cure by species: salt on the fatty fish, no cure at all on the tuna, salt with sugar on madai and hirame so the salt does not run over them, and kombu for umami during the cure.4 The rice is polished, larger-grained and dressed in a red vinegar a Japanese master gave him, and he scores each thick piece of fish so it opens like an accordion against it.4
Order this / avoid
- Order: the omakase. There is no other format, and it runs twenty-one courses.5
- Take the extra bites at the end, and if the king crab is among them, take that. Odam found it built from head butter sauteed with sake and rice cooked down like congee.41
- Expect: chutoro, akami, uni, otoro, anago, madai and aji among the pieces, and about twenty minutes at the start with no food at all while the fish is portioned in front of you.1

as spartan as the space
, a couple of sakes by the glass and about ten bottles in total, with corkage allowed.4 - Avoid: letting a piece sit. The house rule is fifteen seconds, and Odam reports that Che has thrown people out over it.4

Good to know
- Eight seats, eight services a week, which comes to roughly 256 bookings a month. Che told the Statesman that about eighty percent of them go to regulars, leaving around fifty seats a month for everyone else.5
- How to get one: reservations drop through Tock in months-long blocks on a chosen Sunday morning. Odam's own advice is to be logged in with several browsers open, refreshing, and to take whatever time comes up. Miss it and the waitlist sometimes fills same-day cancellations.5
- Price: $135 plus a twenty percent service fee as at August 2025, which Odam notes is around half what comparable Austin omakase counters charge.5
- It started as a trailer, Tsuke Honten at Hopsquad Brewing, where Che sold a $29 omakase and built the regulars who now hold most of the seats.5
- The front doors stay locked until your seating begins.1
- Hygiene: Austin Public Health scored the kitchen at 4600 Mueller Blvd 100 in January 2026, 100 the previous May and 99 before that. Nothing deducted worth the name.3

Verdict
must-visit — Be logged into Tock on the morning of the drop with more than one browser open, because eight seats a service and eighty percent of them spoken for is the real barrier here, not the money. Eat every piece inside fifteen seconds of it landing, because Che has thrown people out over that one. Bring a bottle, because the sake list is the one thin thing in the room.
