Why go
The format is maw fai, the fire pot, and Mark Wiens's description carries the kitchen's whole method: "fall apart tender thumb sized chunks of boiled beef (neua toon)" pulled from a broth that sits at a simmer all day. You build your own dip from chili flakes, chili vinegar and fish sauce, and order rice bowls alongside. A pot with extra beef and morning glory fed three people for 255 THB at his visit.
