Jeh O Chula
The most queued-for dish in Bangkok began as the boss's after-work bowl: around 2015, third-generation operator Siri "Hia Gao" Chaitawee started dropping instant mama noodles into his family's tom yum, told curious customers to come back at 11pm, and broke the neighborhood.
Why go
The restaurant is older than its meme. Hia Gao's grandparents opened a duck-rice-soup stall in 1967 and ran 47 years at Suan Luang Market before the move near Chulalongkorn University, and the shop carries his mother's name, Jeh O. His own account of the famous dish is disarming: "It was just our recipe of Tom Yum soup... and I just put the instant noodle in" (Bangkok Foodies). That broth, creamy, fierce, loaded with pork balls, squid, shrimp, crispy pork belly and raw egg yolks, is why the bowl holds a Michelin Bib Gourmand. Gambero Rosso reported people waiting "up to 6 hours" for it in 2024.
Order this / avoid
- Order: the tom yum mama at whatever size the table can defend, yolks stirred through at the table, plus the crispy pork belly. The pre-mama menu, the boiled-rice dishes the family built its first 50 years on, is what the regulars add.
- Avoid: arriving at 8pm cold; take a queue number before the 4:30pm opening or come near midnight when the line thins (Gambero Rosso).

should-visit — A third-generation family kitchen whose tom yum was good enough to make instant noodles a Bib Gourmand dish and a six-hour queue a Bangkok institution. The broth is the craft; the mama is the delivery vehicle. It sits at should-visit because the queue tax is the steepest in the city for food this replicable, and the visit only makes sense executed like a plan: number early, eat late.
