Phed Mark
Phed Mark cooks one dish, pad kaprao, and the roster behind the wok explains the confidence: YouTuber Mark Wiens, blogger iTan, actor-designer Pongthep, and Iron Chef Thailand champion Gigg Kamol, with Gaggan Anand on record calling it "the best version in the city without a doubt."
Why go
The premise is monastic: holy basil, chili, garlic and your choice of protein over rice with a fried duck egg, B105 for pork, and nothing else on the menu since the 2019 opening. Broadsheet's Sofia Levin flew home still writing about it: "It defies logic that something so fiercely hot can be so well balanced," crediting the "buzz from green peppercorns" and the "umami undercurrent of fish sauce" under the burn. The shop sits one minute from BTS Ekkamai exit 3 and closes at 5pm.
Order this / avoid
- Order: kaprao pork with the duck egg, mid-tier heat; Broadsheet called level four of the old five-point scale the balance point, and the menu now runs Normal, Medium, and Phed Mark. Beef (B155) for the richer version.
- Avoid: the top "Phed Mark" level on a first pass; the critics' praise describes the mid band, and the max exists as a signature stunt.
