could-visit — A Canongate oyster and seafood room run by the Compass Group, the operator behind the Chop House restaurants on Market Street, in Bruntsfield and in Leith, which tells you it is a professional operation rather than a one-off. It is not in the MICHELIN guide, on either of the guide's own live August 2026 rolls, despite that being assumed when the row entered the queue. Hygiene is a clean Pass from April 2026. CAMRA's record notes cask ale is not available, so come for the oysters and the wine rather than the beer. The tier reflects that nothing has been written about the food itself anywhere.
