Pino Livia put it on the menu at Di Maggio's and called it Jimmy Style, and it is the most Glasgow order on any Italian list in the city. The restaurants came out of the chip shops: Joe Conetta ran a chippy on Macduff Street before he opened Di Maggio's in 1985, which is the Scots-Italian cafe line arriving at the dinner table.

Chips out the fryer inside a morning roll, eaten walking. What goes on top is the local marker, and Glasgow's is salt and vinegar. Chippy sauce belongs to Edinburgh, and the joke is that Walter Black makes Edinburgh's sauce in Glasgow: the Gold Star brand, thinned-down brown sauce.

Italians from Barga in Lucca settled in Glasgow and Paisley in numbers, and by 1914 they ran the cafe trade across the west of Scotland and were the people who put the fish supper into it. The room they built puts ice cream, a chip pan and a formica counter together, and for most towns it was the social centre as much as a shop.

It is on nearly every list in the city and it has been the country's default order for years. By 2019 it was reported the most-ordered cocktail in the United Kingdom, and Glasgow sits in the top five UK cities for it in Revolution's own 2022 sales.
