It trades out of the basement of a serviced-office building on West Regent Street, which is exactly why the lunch queue works: the customers are already in the building.

Ben Paterson opened it on 21 May 2024 and the brief has not wavered since: stacked, saucy subs inspired by classic New York-style delis,
on bread baked daily, with slow-cooked meatballs, spicy chicken parms, pickled vegetables and sauces made in house (Clydeside Containers). Glasgow Live covered the opening the day before it happened (Glasgow Live). Two years on there are three counters. The second is the interesting one: the Sub126 team took over the kitchen at Max's Bar & Cantina on Queen Street in 2025, so the subs now come out of a bar that runs to 3am while the food stops at 5pm (Max's). The third sits in the Clydeside Containers food park on the Broomielaw.
Order this / avoid
- Order: the Number 2, spicy salami with cheddar, rocket, hot honey and sriracha butter, GBP 7.502. The romesco and aubergine with rocket is the meat-free one Glasgow Live named at launch. At Max's, add loaded fries and eat it as a bar lunch.
- Avoid: treating the three sites as interchangeable. The Queen Street kitchen serves noon to 5pm only, and every counter is a daytime operation, so none of them is dinner.

could-visit — Stacked New York-style subs on daily-baked bread, from GBP 5, out of a serviced-office basement on West Regent Street, plus a second counter running the kitchen at Max's Bar on Queen Street and a third at Clydeside Containers. Three sites inside two years is real traction and the sandwich construction is specific: slow-cooked meatballs, chicken parms, hot honey and sriracha butter, sauces made in house. It stays at could-visit because the only full review reachable was a comped one and there is no award. Grab lunch there if you are in the city centre before the kitchens shut.
