The bread arrives with a butter whipped out of whatever the kitchen had left over that day, which has meant black pudding, scallop roe and pancetta on different nights.
Why go
The waste thinking runs through both rooms and it is documented rather than claimed. The scallop gets a garnish built the same way as the butter, out of ingredients that would otherwise go, and at the bar the Pinappleton uses the entirety of the pineapple
, flesh into syrup then dehydrated and candied for the garnish, husk and leaves fermented into tepache that goes back into the glass (Plate up for Glasgow). Owner Andrew Logan says it has been part of our ethos from day one
, and he makes the commercial argument for it as readily as the environmental one, which is the version worth listening to. The service format is the other decision: the kitchen has moved away from the convention of starters and mains

Order this / avoid
- Order: the Deanston Bakery sourdough first, for whatever butter is on that night. The crab cakes under brown crab hollandaise, with extra bread. The twelve hour Iberico pork cheek with pappardelle. A Pinappleton alongside.
- Avoid: Sunday and Monday, when it is shut. Booking for seven or more without knowing that seven and up eat a set tasting menu, capped at ten.

Good to know
- Where: 248 Kilmarnock Road, G43 1TT, at the Newlands end of Shawlands beside Pollokshaws East station, on the First 3 and 38 and the Stagecoach 4.
- Timing: Tuesday to Friday 5pm to 11pm, Saturday noon to 11pm. Closed Sunday and Monday.
- Booking: by phone during opening hours or by email. Seven or more people eat a set tasting menu and ten is the maximum party.
- Drinking: natural wines grown organically, and a bar doing its own ferments, dehydrated garnishes and oleo saccharum.
- Hygiene: the Food Hygiene Information Scheme records Improvement Required, which is the failing tier of the Scottish scheme, from an inspection on 20 March 2024. No re-inspection has been recorded in the 28 months since, so this is an old finding rather than a current one, and it is stated here rather than left out.4
Verdict
could-visit — The technique is the reason to look. The bread comes with a butter whipped out of whatever the kitchen has surplus of that day, black pudding one night and scallop roe another, and the scallop gets a garnish built the same way. At the bar the Pinappleton eats a whole pineapple: flesh into syrup and a candied garnish, husk and leaves fermented into tepache that goes back into the drink. Owner Andrew Logan says the waste thinking has been there 'from day one' and names better profitability as one of its outcomes, which is the version of sustainability worth listening to. The format helps too, small plates landing when they are ready, closer to a tasting menu you assemble yourself. What stops it going higher is that the only person who has published on the cooking found the haddock undetectable in the kedgeree, the sobrasada absent from the pork cheek and the red mullet's sauce flat, and closed with 'just a little bit more and these dishes would be destination worthy'. Separately and not as a reason for the rung, the premises has held an FHIS Improvement Required since March 2024 with no re-inspection since, which is disclosed and keeps it out of anyone's first three.
