Malatang started with barge workers on the Minjiang River in Sichuan boiling whatever they had over an open fire with peppercorns and chilies, and this is the first Scottish branch of the Harbin chain that turned it into 6,000 shops.
Why go
The name is literal. Tan Yunfei, writing for The World of Chinese, puts it as numbing, spicy, boil,
and traces the dish to Leshan in Sichuan, where vendors later peddled the snack with food often laid out on bamboo skewers for diners to pick out
(The World of Chinese). The modern version keeps the pick-your-own part and adds a scale. Zhang Liang was founded in Harbin in 2008 and now runs close to 6,000 stores by its own count, with a global program running since 2019 (Zhang Liang Malatang). The Sauchiehall Street branch opened on 26 June 2025 as the chain's first in Scotland and third in the UK.
