Florattica Rooftop
The signature is Cynara: black-garlic-infused Tanqueray with Campari, Mancino Rosso and clarified artichoke juice, from a head mixologist who came out of Nightjar (Hot Dinners).
Why go
Florattica opened on 2 December 2022 on the eleventh floor of the Canopy by Hilton London City, on the Minories at Aldgate. The ceiling is a hand-wired floral installation referencing the silk patterns of the Huguenot weavers who lived and worked on these streets in the seventeenth century, which is at least a specific idea rather than a generic one. The view runs from St Paul's to Canary Wharf and the Thames, and the terrace is heated and covered, so it is not a summer-only room (Hot Dinners).
Serena Carrino runs the drinks and came from Nightjar in Shoreditch. The list is rebuilt each season around botanicals, and the venue describes it as reimagining timeless favourites through the lens of nature's finest moments
(Florattica). The non-alcoholic serves get the same attention as the rest.
In September 2025 The Pinnacle Guide gave it one Pin. The guide grades bars one, two or three Pins for excellent, outstanding and exceptional, and Florattica was one of ten London bars added that round (Time Out).
Order this / avoid
- Order: Cynara, for the black garlic and the clarified artichoke. Whatever this season's list has done to a classic. Native oysters with Champagne, raspberry and white balsamic. The beef tartare with confit egg yolk and black truffle. One of the non-alcoholic serves.
- Avoid: treating it as a view with drinks attached. And do not walk into the hotel's main entrance; the bar has its own door to the left of it.
What locals & experts say
- Time Out London, Leonie Cooper, 27 September 2025, reporting the award rather than reviewing the bar:
The Pinnacle Guide launched last year and hands out one, two or three 'Pins' to bars that are either 'excellent', 'outstanding' or 'exceptional'.
Florattica was named amongthe new one Pin bars
, alongside Eve Bar, Scales, both Somas, The Cocktail Trading Company, The Pisco Bar at Coya and The Royal Cocktail Exchange. For scale, the same piece notes146 pinned bars across 14 countries, with the UK leading the market, with 45 pinned bars in total
, and only one three-Pin bar in the world, Lyaness.1 - Karyn Noble, Hot Dinners, November 2022, on who is behind the glass:
Head Mixologist Serena Carrino, formerly of Shoreditch's Nightjar, continues Florattica's floral theme with premium spirits and local ingredients. The adventurous cocktail lovers might go for Cynara (black-garlic-infused Tanqueray, Campari, Mancino Rosso and clarified artichoke juice) and there's an equal focus on non-alcoholic choices.
2 - Nobody has reviewed it. No critic or guide has assessed a drink here. Time Out reported an award and Hot Dinners announced an opening, and nothing else that has been written about the bar carries a byline. That gap is why the ruling is what it is, and one review would change it.
Good to know
- Where: eleventh floor of the Canopy by Hilton London City, 11-15 Minories EC3N 1AX, a short walk from Aldgate. The bar has its own street entrance, to the left of the hotel's.
- Timing: no opening hours are published on the venue's own site or anywhere else that was read. Call ahead on 020 3988 4489.
- Booking: the venue takes bookings through its own site, and the whole rooftop can be hired.
- Price: unpublished. Nothing anywhere gives a menu price.
- Weather: the terrace is heated and covered, so it works through the winter.
- Hygiene: there is no Food Standards Agency registration under the bar's name. The building is registered as Canopy By Hilton London City, FHRSID 1431177, rating 5, inspected 8 January 2026, City of London. That is the hotel's rating, not the bar's own.4
- The award: one Pin, The Pinnacle Guide, September 2025.
Verdict
could-visit — Go if you are in the City with somebody to impress, and order the strange one. Florattica opened on 2 December 2022 on the eleventh floor of the Canopy by Hilton on the Minories, with a hand-wired floral ceiling referencing the silk patterns of the Huguenot weavers who worked these streets in the seventeenth century, and a view that runs from St Paul's to Canary Wharf off a terrace that is heated and covered so it works in January. The reason to take it seriously is the person mixing: Serena Carrino came from Nightjar in Shoreditch, and the drink Hot Dinners printed at opening was Cynara, black-garlic-infused Tanqueray with Campari, Mancino Rosso and clarified artichoke juice. That is clarification and infusion work, not a flower on a rim. In September 2025 The Pinnacle Guide, which grades bars one, two or three Pins for excellent, outstanding or exceptional, gave Florattica one Pin, one of ten London bars added that round. Against all that: nobody has actually reviewed a drink here, the bar publishes no opening hours anywhere, and the room is a group hotel operation, which carries the burden of proof. The pedigree and the Pin answer half of it. So it earns a stop on a City evening rather than a journey across town.
