Guest coffees here come through Ozone's own roastery before they reach the bar, which is a different thing from having a good supplier.

Because the roasting and the buying sit behind the same counter as the brewing. Ozone calls the Leonard Street cafe the place where our roastery first met the city

On the shelf, the producer is named alongside the process, the varietal and the roast level. The day this was checked that meant Irene Herrera's washed Marshell from Peru, Einer Saldivar's organic Cansaboca, a honey-process Bolivian from La Avanzada, and a natural Yellow Bourbon from Brazil. Next to the bar there is a real kitchen doing a seasonal breakfast and lunch menu until three, with the room itself described as "committed to local suppliers and minimising waste, with as much attention paid to what's on the plate as what's in the cup."
