The Donovan Bar
Salvatore Calabrese keeps a personal collection of spirits up to 230 years old behind this bar, and pours them into drinks: 1788 Clos de Griffier Vieux cognac, 1770 Kummel, 1930s Angostura (The Spirits Business).

Calabrese, known in the trade as the Maestro, wrote the Breakfast Martini and runs the program here with director of mixology Federico Pavan; their current menu, Our Way
, landed in April 2026 and rebuilds world classics by changing one ingredient or technique (The Spirits Business). The room sits inside Brown's on Albemarle Street and takes its name from Terence Donovan, the Sixties photographer whose work hangs through the space. The house Martini is built from a bottle held in the freezer, Belvedere or Tanqueray No. 10, with Martini Extra Dry (50 Best Discovery). Freezing the whole bottle gets you dilution control without stirring the drink warm, which is why the texture reads thicker than a shaken Martini.

- Order: Salvatore's Martini, then a vintage pour if the budget allows; the Vintage Negroni opens the list at £55 and Salvatore's Legacy, built on the 1788 cognac, runs to £5,500 (The Spirits Business). Jeff saved this place for digestifs, and the old bottles are the reason.
- Avoid: the Naughty Corner if you want a quiet nightcap. The semi-private nook seats up to twelve and fills with groups.

Good to know
- Timing: 11am to 1am Monday to Saturday, noon to midnight Sunday, so it works as a genuine late stop.
- Booking: worth reserving on a weekend; the bar takes walk-ins when there is room.
- Price: standard cocktails run around the twenty pound mark, with 50 Best listing an average of US$18. The vintage list is a separate order of magnitude.

Verdict
should-visit — Worth the detour for one reason that exists almost nowhere else: Salvatore Calabrese's private cellar of pre-industrial spirits, poured into drinks in a Mayfair hotel room. The cocktail program in normal service is polished rather than inventive, and Time Out's 3/5 is fair for that. The rung rests on the vintage list and on Calabrese himself, who put the Breakfast Martini on bar lists everywhere.
