13 Manette Street

Manette St, Mar 2024; White Russian cleared like a consomme; picked by Nieves Barragan Mohacho

Jeff's note

Three Sheets Soho

The White Russian is clarified with egg white, the way a kitchen clears a consomme. Noel Venning on why: "We don't cheat to make them clear" (Foodism).

Why go

Max and Noel Venning opened this in March 2024, eight years after Three Sheets Dalston, in a narrow room on Manette Street that widens toward a skylight at the back. The drinks look simple and are not. The Dirty Martini took a year to develop and uses Ethiopian koseret tea and olive brine in place of olive oil; the Bramble took months; the house French 75 arrives carbonated, built on clarified lemon, moscato, orange flower and verjus. Development happens at the Dalston bar under Rosey Mitchell and Simone Tasini, who have been making drinks for the brothers for over six years, and the clarification is done with kitchen technique rather than laboratory kit. The Soho list turns over in parcels of five drinks every three months, which Noel Venning states as the plan for this site specifically. The room is designed against showmanship: no drinks wall, no spotlight on the bartender, a marble bar shaped so the people sitting at it face each other.

Order this / avoid

  • Order: the carbonated French 75 first, then the White Russian to see whether the consomme trick lands. Scottish Coffee if it is cold, Mango Ice Tea if it is not. British oysters with a glass of champagne, which is what the wine list is built around.
  • Avoid: turning up expecting the World's 50 Best bar. That is Kingsland Road. And do not come here for theater, because the design deliberately withholds it.

What locals & experts say

  • Nieves Barragan Mohacho, chef-owner of Sabor and Legado, in the MICHELIN Guide (13 February 2026), naming this branch: "Three Sheets in Soho has perfect cocktails and is always a great time." ref
  • Monica Berg, bartender and co-owner of Tayer + Elementary (TOPJAW, 28 December 2024), on the brand rather than a site: "Best place for cocktails: Three Sheets. Flavours that are a bit unusual but they make them really familiar." ref
  • Kaneda Pen, chef-owner of Mamapen (TOPJAW, 12 February 2025), also brand-level: "Best cocktail spot: Three Sheets. I don't need chimpanzees and palm trees on my cocktails." ref
  • Restaurant (22 March 2024), Joe Lutrario, on the operators: the Vennings "are known for their deceptively simple cocktails and clean flavours" and "are pioneers of pre-batching". ref
  • The Dalston bar's record, stated as the sibling's: five appearances on the World's 50 Best Bars list, and seventh in the UK Top 50 Cocktail Bars as of March 2024. Those belong to Kingsland Road.

Good to know

  • Where: 13 Manette Street W1D 4AP, off Charing Cross Road at the eastern edge of Soho. The top of the street is pedestrianised and the frontage folds back in summer.
  • Timing: afternoon until late, seven days a week. At launch in 2024 it ran all day from morning coffee and pastries; the venue's own copy no longer says so, so treat the morning service as unconfirmed.
  • Booking: through the venue site, and worth it for a table rather than a stool.
  • Food: at opening the kitchen was run by ex-Lyle's chef and butcher William Blank on salt beef sandwiches, croquettes, triple-cooked chips and oysters. The venue now leads on British oysters with champagne and a burger it calls London's best, which is its own claim. Nothing on the record explains the change.
  • Price: three of four. Central Soho.
  • Hygiene: FSA rating 4, good, from a Westminster inspection on 2 April 2026, with component scores of 5 for hygiene, 5 for structure and 10 for confidence in management (record).
  • Sites: two Three Sheets and one cousin. Three Sheets Dalston, 510B Kingsland Road E8 4AE, opened 2016, is the original and holds the awards. Little Mercies in Crouch End is the same brothers under another name. This row is Manette Street, and every award cited above is Dalston's.

Jeff's take (his words)

  • Note: none. His saved-places export carries an empty Note for this row. The master list's "Central sibling of the Dalston original" was written by an earlier enrichment pass, and it is at least the right relationship.

Verdict (Chef Jeff ladder)

should-visit — The Vennings clear their White Russian with egg white, the way you would clear a consomme, and Noel Venning is explicit that there is no centrifuge involved. That is the whole argument for this bar: kitchen technique applied to drinks that read as simple and are not. The Dirty Martini took a year to develop and swaps olive brine for olive oil and adds Ethiopian koseret tea; the house French 75 is carbonated with clarified lemon, moscato, orange flower and verjus. The Soho list is on a stated cycle of five new drinks every three months, and the R&D happens up the road at the Dalston bar under two people who have been doing it for six years. Nieves Barragan Mohacho of Sabor and Legado told the Michelin Guide in February 2026 that Three Sheets in Soho 'has perfect cocktails and is always a great time', and she named the branch. The room is the opposite of a show: no drinks wall, no spotlight on the bartender, light on the tables, a marble bar you sit around and a facade that folds back in summer. It stops short of must-visit because the World's 50 Best record belongs to the Dalston original and no critic has yet reviewed this address on its own terms.

Order

  • The French 75, carbonated, with clarified lemon, moscato, orange flower and verjus
  • The White Russian, clarified with egg white the way you would clear a consomme, no centrifuge involved
  • Scottish Coffee, buttered Scotch with salted coffee and shortbread cream
  • Mango Ice Tea, pickled mango with cloud and lapsang teas and rum
  • British oysters with a glass of champagne, which is what the wine list is built for

Good to know

  • Booking: recommended
  • Timing: open-late
  • Best for: drinks, date, solo, big-night, groups-ok
  • Avoid: Coming for the World's 50 Best bar. That is the Dalston room, and this one is two years old; Expecting a show. There is no drinks wall and no spotlight on the bartender; the light is on the tables

    MICHELIN Guide (via places-db/london/data/chef-votes.jsonl)

Andrew Young, 13 February 2026. Nieves Barragan Mohacho, chef-owner of Sabor and Legado, names this branch by name: 'Three Sheets in Soho has perfect cocktails and is always a great time.' The vote file's own note reads 'BRANCH: she names the SOHO site. Our master-CSV row is Three Sheets Dalston, which Bea Bradsell voted for in 2018. Two branches, two rows; do not merge.' This is the only chef vote in the file that attaches to THIS address

    Restaurant (William Reed trade press)

Joe Lutrario, 22 March 2024, the opening write-up. 'A vibey, casually elegant bar just off Charing Cross Road on the eastern edge of Soho. Unusually for a cocktail focused establishment, Three Sheets, Soho is open all-day; from morning coffee and pastries, through to lunch and into aperitif, dinner and nightcaps.' On the operators: 'Brothers Max and Noel Venning, who are known for their deceptively simple cocktails and clean flavours... they are pioneers of pre-batching.' On the lineage, WHICH BELONGS TO DALSTON: 'Three Sheets Soho follows the success of the pair's debut cocktail bar Three Sheets Dalston, which launched in 2016. It is one of London's highest-rated cocktail bars having made the World's 50 Best Bars list a total of five times. It is currently ranked the seventh best bar in the UK by the Top 50 Cocktail Bars.' The pair also run Little Mercies in Crouch End and have built cocktail lists for other restaurants including Tom Brown's Pearly Queen. On the kitchen: 'The kitchen at Three Sheets Soho is headed by ex-Lyle's chef and butcher William Blank', with a menu 'focused on salt beef sandwiches, croquettes, triple-cooked chips and fresh oysters'. On the drinks: 'The drinks menu is largely unique to Soho whilst still mirroring the Three Sheets signature style. Options include the brother's famed carbonated take on French 75 (gin, clarified lemon, moscato, orange flower and verjus); Mango Ice Tea (pickled mango, cloud and lapsang teas and rum); and Scottish Coffee (buttered Scotch, salted coffee and shortbread cream). Alongside these is a concise but carefully thought out wine list that's big on Champagne.' On the room: 'On the recently redeveloped Manette Street, the space starts narrow but opens out towards the back. Design details include a centrepiece Calacatta marble-topped bar; dark-green leather curved banquettes; and an original skylight to the rear positioned over some more intimate round tables', with 'a fully-retractable facade and ample pavement space (the top of Manette Street is now pedestrianised)'

    Foodism

Christy Spring, 16 October 2024, an interview-led feature with Noel Venning. THE MENU CADENCE, verbatim: 'Although both branches share a few cocktails on their menus, like the White Russian, Stonefence, and Scotch Coffee, the menu at the Soho outpost is less changeable, catering for Soho's unquenchable thirst for booze. The plan is to change the menu here in parcels of five drinks every three months.' On the philosophy, Noel Venning: 'Flavour is the main driver. Most drinks here will have a few recognisable ingredients and then several lesser-known ones that pique your interest.' On R&D time: 'The Dirty Martini took a year to develop; the Bramble took several months', and that work 'happens in the Dalston branch under the experienced hands of Rosey Mitchell and Simone Tasini, who've been developing drinks for Three Sheets for over six years.' On technique, Noel Venning: 'We don't cheat to make them clear. Take the White Russian, which is clarified using egg white, as you would a consomme in your kitchen', with the piece noting the bar 'leans on kitchen techniques that chefs have used for decades' rather than centrifuges and vacuum chambers. Specific flavor work named: Ethiopian koseret tea and olive brine in place of olive oil in the Dirty Martini, and five spice in the Sazzaquack to mimic absinthe. On the design: Soho 'eschews the ego of a flashy drinks wall and limelight on mixologists in favour of spotlit tables and a table-shaped bar to encourage stool-dwellers to speak to each other'. The brothers are described as Mancunian

Three Sheets (venue site, Soho page, read 30 July 2026)

First-party. 'Three Sheets Soho is our central London spot, just off Greek Street. Like Dalston, it's all about relaxed service, seasonal cocktails, and drinks that are meticulously simple. With British Oysters paired with champagne and London's best Burger and Chips alongside a seasonal food menu. Open in the afternoon til late seven days a week.' The group's landing page states the house position: 'every great drink needs three simple ingredients: craft, restraint, and the right setting. Welcome to a neighbourhood bar with world-class standards.' Two sites are listed, Dalston and Soho, plus a WORKS page for consultancy. The burger claim is the venue's own marketing and is recorded as a claim. Note the food offer has moved since the 2024 launch, when it was salt beef sandwiches and croquettes

TOPJAW (via places-db/london/data/chef-votes.jsonl), BRAND-LEVEL, NO BRANCH NAMED

Two further industry picks name Three Sheets without saying which room. Monica Berg, bartender and co-owner of Tayer + Elementary, 28 December 2024: 'Best place for cocktails: Three Sheets. Flavours that are a bit unusual but they make them really familiar.' Kaneda Pen, chef-owner of Mamapen, 12 February 2025: 'Best cocktail spot: Three Sheets. I don't need chimpanzees and palm trees on my cocktails.' The vote file records both as branch-ambiguous at namematch 0.90 against the Dalston row and does not assert a site. They are quoted in this entry as evidence about the BRAND. Separately, Bea Bradsell's 2018 Time Out pick names 'Three Sheets on Kingsland Road', which is Dalston, and is not used here
