Diego Guerrero changes DSTAgE's menus from top to bottom every year, and in 2024 he said none of his old classics would ever come back.
Why go
Diego Guerrero, a cook from Vitoria, had won two MICHELIN stars at El Club Allard when he left to open DSTAgE on Calle Regueros in 2014.1 The critic Benjamín Lana wrote in 2024 that almost nobody then understood what he meant to do in that underground space, half indie dive.

Pick a set menu by how hungry you are and how much time you have. In April 2024 Dtaste ran to 16 plates for 175 euros, Dstage to 18 for 200 and Denjoy to 22 for 220.2 Miguel Ayuso Rejas of Directo al Paladar ate one that spring and wrote that you won't know the dishes until you go.

Lana went back in August 2024 after some years away and wrote that Dstage is a restaurant where a lot of interesting things happen, and it is certainly more original than half of Copenhagen's.
1 The plates that moved him most that year were Basque: a Gernika pepper taco stuffed with its own seeds, and hake in salsa verde made with a tail aged for four days in koji.1 Ayuso Rejas called the pumpkin biscuit with butter and caviar a tremendous bite.

The room divides people. Ayuso Rejas wrote in 2024 that DSTAgE and Mugaritz share the honour of being the restaurants most battered by the new food criticism born on social media.
