The lamb shoulder has survived a group split, a refit that painted the room black, and fifteen years of its chef being on television, and The Age Good Food Guide still calls it the bedrock of the whole business.

Why go

Shane Delia trained in haute cuisine at the Sofitel's Le Restaurant before opening this basement room on Bond Street, and the technique shows as balance rather than as ceremony (Broadsheet). Dinner runs as a set menu, currently a Middle Eastern tour from hummus through beef manti in harissa oil and fried onions. The guide's snack picks are the black garlic croquettes and a duck cigar rolled in pastry. Maha left the Made Establishment group in about 2016 and is now the flagship of Delia's own group, alongside the East restaurant, the Jayda cocktail bar two doors down at 19 Bond Street, and Layla in Brisbane. The kitchen builds its vegetarian degustation as a full four, six or eight courses, which is why Larissa Dubecki reads the room as the place vegetarians and vegans go "when they want a big, splashy night out" (Time Out).

Order this / avoid

  • Order: the slow-roasted lamb shoulder, at present finished with dried figs, and the roast lamb hummus that came later. Black garlic croquettes and the duck cigar off the snacks. If you are not eating meat, take the vegetarian degustation rather than asking for swaps.
  • Avoid: the soufra set menu unless you arrive hungry, which is the guide's own warning. And do not go hunting the middle of the wine list, since there is very little between about $40 and about $150.

  • The Age Good Food Guide, 15 out of 20 (first published November 2024, updated October 2025): "Nearly two decades in, the gilded tiger of Middle Eastern fine dining sure has staying power. So too its signature lamb." The page is unbylined, so it is the guide's verdict rather than a named critic's, and Good Food states its reviews are booked anonymously and paid independently. ref

Good to know

  • Where: 21 Bond Street, in the CBD, below street level.
  • Timing: lunch and dinner seven days. Time Out records 12pm to 3pm and 6pm to 10pm.
  • Booking: essential, and the guide's own tag says the restaurant accepts bookings. Private dining is available.
  • Diet: the Good Food Guide tags Maha vegan-friendly, vegetarian-friendly and gluten-free options, and the vegetarian degustation is a full menu in its own right. Absence of any other flag means unknown.
  • Value: a $15 weekday Bowls of Goodness lunch ran through October 2025. Worth checking whether it still runs before writing the room off as expensive.
  • Operator: chef-owner with a group. Delia Group runs Maha, East, Jayda and Layla in Brisbane, so this is a flagship rather than a one-room bet.
  • Hygiene: Victoria runs no venue rating scheme like the UK's FSA. What it does publish is Safe Food Victoria's register of convictions under s.53D of the Food Act 1984, where a conviction sits for twelve months. The register as at its 21 July 2026 update carries fifteen entries and this venue is not one of them. ref

Verdict (Chef Jeff ladder)

should-visit — The slow-roasted lamb shoulder has been on this menu in some form since the restaurant opened, through a 2018 refit, a split from the Made Establishment group and a decade of Shane Delia's television work, and The Age Good Food Guide still calls it 'the bedrock' of the whole operation. The guide scored the kitchen 15 out of 20 and updated that page in October 2025, so unlike most of the Melbourne rows sitting in the top band this one has a current third-party assessment behind it. What earns the rung beyond the lamb is the vegetarian side: Maha builds a four, six or eight course vegetarian degustation rather than swapping a dish, and Larissa Dubecki's read is that this is where people go when they want a big night without meat, which is a genuinely useful thing to know about a $$$$ room. It is fine dining, it prices like fine dining, and it is the register Melbourne already has too much of, so it sits under occasion rather than as a first send. Shane Delia's own words about it count for nothing here, by rule.
