Martiny's makes a caprese cocktail out of whiskey, tomato water, grapefruit juice and milk that Neha Talreja says tastes exactly like the salad, and it comes with a warm oshibori before the first glass.4

Why go

Takuma Watanabe ran the bar programme at Angel's Share, and when that room's original location closed in 2022 he opened this one the same April.1 The building was the studio of the French-American sculptor Philip Martiny, which is where the name comes from, though Watanabe also happens to drink martinis. The service model is omotenashi and it shows in the small things: the towel, the Kimura crystal, and a menu 50 Best describes as ordered into suggested courses, akin to an omakase menu.

Order this / avoid

• Order: the caprese cocktail, if the bar will still build it.4
• Order: the Grand Martiny's, a balance of gin, sherry, port, cognac and elderflower liqueur, which the bar itself specs as Bombay Sapphire, La Cigarrera Manzanilla, Churchill's Porto 2016, St. Germain, Hine Rare and grapes.2 To eat, the wagyu tartare with XO sauce and shio kombu on milk toast, or the Scotch Japanese eggs, an ajitama wrapped in tsukune sausage for dipping in yakitori tare.
• Avoid: treating the list as the only route. Dominique Roy tells the bar what he likes and lets them build it, and says his own is sherry.

Verdict

should-visit — Takuma Watanabe ran the bar at Angel's Share until that room closed in 2022, then opened three floors of a carriage house in Gramercy and built an eight-step list you drink in courses. The Grand Martiny's is gin, manzanilla, 2016 port, St. Germain and cognac, which is a lot of moving parts held in one ruby-coloured glass. Dominique Roy's advice is to skip the list and tell the bar what you like.
