GN Chan and Faye Chen ran this as a touring pop-up before it took the Lower East Side address, and they built two bars inside it. At the front is Free Range, which 50 Best describes as a modernist take on the locale's soda tap tradition, pouring kegged seasonal cocktails and beers with no ceremony. Through the partition is The Coop, where the drinks copy dishes: the bar's own line is that culinary techniques are used to deconstruct and rebuild flavors.2 That is the room the rankings are about.
