Anthony Mangieri is the only person who touches the wood-burning oven.1 He has been adjusting flours and technique for over thirty years, and this is the sixth version of the restaurant, after New Jersey, the East Village and San Francisco.46 The guide gives it a Bib Gourmand, and Ligaya Mishan put it in the Times' hundred for 2026 with a line that tells you what to expect: You will not remember the appetizers. You will barely register the toppings. All that matters at this reservation-only pizzeria is the crust, a technical marvel of puff, bulge and scorch.

The house makes one dough per diner, so you get one pie and that is the meal. Will Hartman rates that a real cost: the rule can put a slight damper on the experience, unless you manage to get in with a few people who don't mind sharing.

Order this / avoid
- Order: the Cosacca. Dominique Roy:
tomato, pecorino, and that's it, so simple, with a little crack of dry oregano and sea salt on top. The tomatoes are so good and the dough is so fluffy.

and the guide says dessert is sorbet or gelato and nothing else.61 - Avoid: ordering toppings onto the Cosacca or the nightly special. Those two are fixed; everything else takes parmigiano, Calabrian chilies, anchovies or pepperoni.4
