Stefano Callegari was running a slice shop in Testaccio called 00100 when he started putting trattoria sauces inside a triangular pocket of slowly leavened pizza dough. That was 2009, the shape now has four doors in Rome, and Daria Reina orders trapizzini in when she hosts a dinner party. Where to get it

Trapizzino on via Giovanni Branca in Testaccio is the original counter and it has no table. Daria Reina, who co-founded the Chez Dede boutique, gives the only ordering advice worth having: "try at least three different fillings to really get what all the hype is about". 3 She also treats it as a delivery: "When I host dinner parties, I order trapizzini from here." 3 If you would rather sit, Eater says take the Trastevere branch, which has "table service and a full bar with Lazio wines". 1 And if you want what Callegari cooks when he is not making these, Romanè is open straight through from midday.

The story

Callegari was selling pizza by the slice in Testaccio under the name 00100 when this started.
