Five local partners have run the room since 2000 and one of them is the chef, Antonello Magliari. His carbonara came fourth equal of twenty-one when Gambero Rosso ranked the city's versions: a Giuseppe Cocco spaghetto, Re Norcino guanciale cut into squares and hard-seared, yolk only, Deroma Pecorino Romano DOP (Gambero Rosso, 2020).
