Panificio Marè Prati
Panificio Marè Prati leaves the dough for its pizza al taglio to rise for at least 24 hours.
Why go
Fabio Marè founded this forno (bakery) on Viale Angelico in 1987. His son Daniele runs it now (Italy Segreta, 2025). Turismo Roma, the city's tourism office, says the long rise makes the pizza al taglio (pizza by the cut) crisp and easy to digest
(Turismo Roma, 2025).
Marco Radicioni, who makes gelato at Otaleg, calls Marè the place closest to my heart,
though he does not say which of Rome's two Marè bakeries he means. When he had a gym in Trastevere he walked there and back, 12 kilometers in all. He still often goes alone to stand to one side and taste. Gianni Olimpo, the specialty-coffee expert who is opening a pizzeria with him, grew up in Campania and spent ten years in Milan: I discovered pizza al taglio at Marè and never forgot it
(Gambero Rosso, 2025).
Start with the pizza rossa (red pizza, the tomato slice). Annie Replogle of The Infatuation found it super crispy, with rich, oily tomato on top that's the ideal balance of sweet and tangy.
She also sent readers to a garlicky, parsley-packed pizza marinara and cheesy, saucy, eggplant parm pizza that's worth trying if they have it,
and told them to bring friends to share (The Infatuation, 2024). Loaves line the back shelves, and jam-filled crostata sits up front beside the slabs of pizza (Replogle, 2024). Beyond the pizza Turismo Roma singles out two things: the wholemeal bread with cereals and the supplì (fried rice croquettes), with a dry crust and the rice cooked just right. A team of women runs the counter. Finish with a chocolate ciabattone, as Turismo Roma suggests (Turismo Roma, 2025). The Infatuation files the shop under cheap eats.
