Seu Pizza Illuminati
Pier Daniele Seu leavens his dough twice so one slice is chewy like Naples and cracks like Rome.
Why go
Pier Daniele Seu leavens the dough twice. Time Out's Livia Hengel writes that the slightly chewy consistency of Neapolitan pizza and the crunchiness of the Rome-style crust is achieved by chef and wizard Pier Daniele Seu's double-leavening
(Time Out). Roman crust is thin and cracks, Neapolitan is chewy, and one slice here gives you both. He opened in 2018 and runs it with Valeria Zuppardo.
50 Top Pizza put the room second in the country in 2026, tied with I Masanielli in Caserta, and it gave the Assoluto di Melanzane its Pizza of the Year award the same night. The guide's own line on the tasting: a parade of masterful textures and flavours
(50 Top Pizza). It grades the wine list Eccellente, over thirty labels, which is not a phrase most pizzerias earn. Gambero Rosso says the fritti are compulsory.
Order this / avoid
- Order: the Assoluto di Melanzane, then the amatriciana pizza, which puts the amatriciana sauce on a crust. The Infatuation has the dough
topped with rich, tangy tomato sauce, crispy guanciale, shreds of pecorino, and cracks of black pepper
.5 - Avoid: a Tuesday outside summer. Roma Capitale's own tourism listing has the room shut that day, and open daily only from June to September.8

Good to know
- Booking: essential, and dinner is the only service outside summer.
- Price: Time Out put a meal at around 20 euros a head without drinks in May 2025.
- Where: Via Angelo Bargoni 10, on the south edge of Trastevere.
Verdict
must-visit — Second in Italy, tied, on the ranking Italian pizzaioli argue about, plus Pizza of the Year for the Assoluto di Melanzane and top of the Lazio list, all in the 2026 edition. Pier Daniele Seu double-leavens the dough to get Neapolitan chew under a Roman crack, which is a stated mechanism rather than a style claim. The wine list is graded excellent by the same body, and a meal runs about twenty euros. This is the pizza booking in Rome.
