Antonio Ziantoni sends out quail with sage and carnation flowers.
Why go
Antonio Ziantoni cooks and Ida Proietti runs the room. Gambero Rosso's 2026 Rome edition promoted one restaurant in the whole city to its top rating, and Antonella De Santis wrote that it stands out in a quarter prey to a sometimes suffocating tourist influx
(Gambero Rosso). MICHELIN holds a star here and names one plate: quail with sage and carnation flowers.
Gambero Rosso's Trastevere guide names the carciofo travestito, an artichoke presented as alla giudia and cooked another way, and an oyster with nervetti and brassicas (Gambero Rosso). The MICHELIN inspector's reading is that the cooking is creative, yet always governed by rigour and restraint, and built on solid classic foundations
.
Order this / avoid
- Order: the shorter menu. The Infatuation:
It's one of the rare fine dining places where you'll want to go for fewer courses, since the portions are so rich and satisfying.
4 - Avoid: expecting a loud room. The MICHELIN inspector calls the service knowledgeable and cordial and the room discreet.1
What locals & experts say
- MICHELIN Guide (One Star, 2026):
A young chef of undisputed talent is the driving force behind this discreet restaurant, hidden away behind the busier, more touristy streets of Trastevere. We are speaking of Antonio Ziantoni and his cuisine: creative, yet always governed by rigour and restraint, and built on solid classic foundations.
1 - Gambero Rosso, the Trastevere guide (2024):
On elegant via Mameli, here is the room that sits at the top of Rome's creative cooking, riding the crest of the wave.
3 - The Infatuation (Annie Replogle):
One standout is the tender filet of peppery steak on top of a smooth hazelnut purée and drizzled with sesame vinaigrette, served with crusty bread and warm incredible butter.

Verdict
should-visit — Gambero Rosso promoted exactly one Rome room to Tre Forchette in its 2026 edition and this was it, and MICHELIN holds a star on the same address. A tasting menu usually has to earn its place here by being the only room at its level or by doing something nobody else does; being the single promotion in the city's own guide is that case. The Infatuation's advice is to order fewer courses, which is the sort of thing you only learn from somebody who ate it. No critic has published a verdict on this kitchen, so the case is two awarding bodies.
