The Infatuation's brisket guide puts LeRoy and Lewis first in Austin and Franklin second, and the board at the top pit runs past brisket into beef cheeks out of a tallow confit, whole hog butchered on site and a link cased that morning. So order across the tray, and run the day in the order the sell-outs allow: the full board early, a short weekday queue in the middle, and one of the few rooms still cooking in the evening.

I send people to four beer rooms in Austin: Meanwhile, Lazarus, Austin Beerworks at Sprinkle Valley for the barbecue parked on its lot, and Nosh and Bevvy for the British end. Everything after them runs in my order of drinking: sours first, then the hops, then the British ale and the cask. The yards come next, because for most of the year the shade decides the afternoon before the beer does, then the four rooms I would hand to somebody else, and the four addresses that need a car come last.

Smitty's and Kreuz were one Lockhart business in one building until a will split the name from the room in 1999, and you can eat both sides of that in an afternoon, with Barbs and Black's inside the same short walk of the courthouse square. The other drive is Dripping Springs, and the closing times fix its order: bread at Abby Jane, beer at Jester King, then cask off Acopon's four hand pumps. Barbs trades two days a week and the bakery shuts before the beer starts.
