This is the Parmer Lane room in Northwest Austin, opened in May 2020 by John McElroy with about two dozen Texas taps and a stated plan to reach fifty.3 The operator now puts the wall above fifty and describes it as one hundred percent Texan, which is the kind of constraint that changes a list rather than decorating it, because it forces the buying to follow what breweries in the state are actually releasing. The food is specialty pizzas with calzones, grinders and salads alongside, and one of the opening pizzas was sriracha brussels sprouts with goat cheese, which tells you the kind of pizza this kitchen wants to make. The Infatuation has covered the chain once, at the Mueller room in August 2023, and that page is unrated. I haven't found a byline that has eaten at this address.1

- Note: "Playground". Neither the chain's own site nor the local paper's opening report mentions a playground at any of the six rooms, so check before you promise a child anything.
Verdict
could-visit — A Northwest Austin pizza and beer room on Parmer Lane, open since May 2020, whose real proposition is the draft wall. The operator restricts it to Texas beer and puts it above fifty lines, which is a buying rule rather than a slogan and means the list moves with what Texas breweries release. The pizza is specialty-driven, with calzones, grinders and salads alongside, and it runs late enough on weekends to be an actual evening. Its inspection record is the cleanest thing about it, five checks between 2023 and 2026 all in the low nineties. The Infatuation has written about the chain once, on the Mueller room in August 2023, and Nicolai McCrary called Aviator a place quickly establishing itself as a neighborhood go-to across its Austin locations.
