Raphael Brion rated this 8.4 for The Infatuation and called the pizzas nearly perfect and textbook. On a Neapolitan, praise like that is praise for fermentation and oven management.1 The lineage matters. The original Bufalina opened on Cesar Chavez in 2013 and closed in 2021, when a condo development took the building. This Brentwood room reopened the operation late in 2022.1 The wine list is an odd, good shape, running from cult Catalan producers to new-school Texan wineries.1
Order this / avoid
- Order the red pie, which takes the marinara profile and doubles it, double garlic and double parmesan with chili flakes. Brion calls it electrifying.1
- Or: the white taleggio with sausage and scallions, or the pickle pie of mozzarella, fontina, oregano and giardiniera.1
- Add one of the rotating handmade pastas, which have run to cacio e pepe and casarecce with garlic confit and fresh tomatoes.1
- Finish: vanilla ice cream with sherry poured over it at the table, the one dessert that is always on. Order a glass of the same sherry alongside.1

Verdict
should-visit — Walk in, and walk in late or early in the week, because nobody here takes a name. Two people should order one red pie, one pasta and the ice cream, and drink whatever Catalan bottle the floor is excited about. This is the pizza I would put against any Neapolitan oven in Texas, and the wine list is what makes it a dinner and not a slice run. Skip it if you are six people with a schedule.
