Why go
It opened on West Sixth in December 2025, in the old Cover 3 space, with chef Leo Spizzirri running the kitchen alongside partners Mike Pottorff and Chris Ruhling.4 The press went to the oven, a gold-tiled Marra Forni built to look like Vesuvius and reported as the largest of its kind in Texas. The dough is the more interesting half. It is built on Rouge de Bordeaux, a heritage grain grown in North Texas and milled daily by Barton Springs Mill, carried on a three-day biga with nothing else in it but water and salt. Fresh-milled flour behaves differently from bagged, and three days is a fermentation long enough to be a flavor choice rather than a scheduling one. Spizzirri calls the style Heritage Post-Neapolitan and runs ten pizzas. He trained for nearly fifteen years under Graziano Bertuzzo, the headmaster of the Scuola Italiana Pizzaioli, and the Associazione Pizzaiuoli Napoletani made him its ambassador to the United States in 2018.3 In April 2026 the city voted it Austin's best new restaurant, on which see below, because how that vote worked matters as much as the result.
Order this / avoid
- Order: the margherita to read the crust, then one of the loaded ones. The card runs to vodka and burrata with prosciutto, a harvest with roasted delicata squash and soppressata, and a spicy sweet corn.4
- Avoid: going for the oven. It is the most photographed thing in the room and the least useful thing to know about the food.

- It won Best New Restaurant at the 2026 CultureMap Austin Tastemaker Awards, and readers picked it. An expert panel chose sixteen nominees from rooms that opened between January 2025 and February 2026; the public then voted them down in a four-round online bracket between 19 March and 7 April, once a day if they liked, and the trophies went out at a ticketed party on 9 April. CultureMap's own later piece states it flatly:

So this is the city's affection measured, which is a real thing to know and is not a judgment on the pizza.13 - No desk has published a scored review. The Infatuation is the Austin desk that puts numbers on rooms and it has none on this one, so what stands is four CultureMap pieces and an award.

- The dough gets its own room. The kitchen runs a temperature- and humidity-controlled dough lab alongside a custom oven built in Naples, which is what a three-day biga needs if the fermentation is going to land in the same place twice.3
- Timing and price: nobody publishes either, so check before you go.
- Hygiene: no inspection record found. The room opened in December 2025 and the register's newest published inspection is 22 May 2026, so the gap most likely sits in the feed, which is an explanation and not a clean result.5

Take the title for what it is, a popularity bracket rather than a critic's verdict, and then look at the flour, which is the part that holds up either way: Rouge de Bordeaux, a heritage wheat grown in North Texas, ground daily by Barton Springs Mill and carried on a three-day biga in a humidity-controlled dough lab. Leo Spizzirri spent nearly fifteen years under the headmaster of the Scuola Italiana Pizzaioli and was made the Associazione Pizzaiuoli Napoletani's ambassador to the United States in 2018. It serves ten pizzas, with a bar and a bistro menu behind them.
