Palm Pizza
The rounds are thin, foldable New York at 18 inches. The squares are thick crust. Most of it sells by the slice. The team that runs Bufalina down the street is behind it.1
Why go
Steven Dilley owns Bufalina and brought Grae Nonas in to rework that menu in 2022. The two of them then worked out a separate dough for this room with Bufalina's wine director Rania Zayyat, built for the New York format from the start.2 Nonas left in 2024 and the dough stayed. You order at the counter inside. Then sit at a picnic table under the palm-shaded canopy that gives the place its name.1
Order this / avoid
- The namesake Palm, tomato sauce, mozzarella and stracciatella. If you want more on it, the pepperoni mushroom. Ask nicely and they will usually do half and half.1
- The Caesar, which arrives about six inches tall under breadcrumbs Nicolai McCrary reckons come off hoagie-bread scraps.1
- Avoid: The Hero if you came for the bread and the mortadella. The bread is excellent and chewy. The olives and italian dressing shout over it.1

At $30+ a pie, Palm isn’t redefining the genre in a city with a surprisingly strong roster,
he writes,especially because the crust leans a little more bready than chewy.

Good to know
- Wines by the glass and the bottle, which is the Bufalina inheritance showing.1
- Hygiene: Austin Public Health scored this suite 91 on 28 May 2025 and 95 at the routine before it, on a scale where 70 is the failing line.3
- Not this business: Las Cazuelas trades at the same street number without the suite and has twice scored exactly 70. Different premises, different operator, and none of it belongs to Palm.3

Verdict
should-visit — Buy by the slice and take one of each; a whole pie runs past thirty dollars and the crust leans bready. A group can turn up here without a booking.
