Discada
Xose Velasco and Anthony Pratto sell one taco. Beef, pork and vegetables go on a repurposed tractor plow disc in layers, each cooking in the juices of the one before, and Velasco puts the whole job at thirty to thirty-five hours.5 The trailer parks outside the bar Chalmers on East Cesar Chavez.1
Why go
Discada opened in February 2018 as a specialist, and Texas Monthly's taco editor says why that is the interesting part: Some taquerias are so confident about the taco in which they specialize that it's practically all they serve.
5 The dish takes its name from the vessel. A discada is a round, repurposed plow blade used like a wok,
and the style belongs to northern Mexico and the borderlands.5 The recipe is Velasco's father's, out of Chihuahua, reworked after the family moved to Mexico City.6 Pratto told the Chronicle they had been talking about doing it for almost a decade: In a city known for tacos, we noticed that discada was absent from the taco scene.
6 The pineapple is Velasco's own call. On opening day his brother told him the flavors were all there except sweetness, and Velasco, who likes pineapple on al pastor, put it on this taco instead.5

Beef, pork and peppers are cooked down across a broad disc pan, and the mixture is piled into tiny corn shells and topped with the acid and citrus of tomato, onion and lime juice.

Offering only one taco leaves a business no room for error. But Discada owners Anthony Pratto and Xose Velasco's creation comes out perfect every time.
That section has no ranking; only the list's top ten carry numbers, and the Austin room among those is Nixta Taqueria at No. 10.3 - Matthew Odam ranked it seventh of the twenty best tacos in Austin for the Statesman in May 2025, and his verdict is
Small tacos, big flavor.

Good to know
- The trailer moved. It stood on Rosewood Avenue for seven years, and the newest page to name an address puts it at 1700 E Cesar Chavez St. Older lists still print the Rosewood lot.15
- The two accounts disagree on the layers, seven in the Chronicle's 2018 telling and eight in Ralat's 2019 one.6
- Hygiene, and read this carefully: Austin Public Health holds no inspection for this venue. The city's published dataset covers fixed food establishments, mobile vendors are inspected under a separate program whose scores are not published as open data, and Discada is a trailer.7
Verdict
must-visit — Order the eight if there are two of you and the five if you are eating again later, and take the pineapple, because the sweetness is the part Velasco added on purpose. The trailer is outside Chalmers now, so you can drink there while you wait. Ralat and Odam both cover Texas tacos for a living, both have eaten this one, and neither has a caveat.
