Why go
Fermin Nunez took ten years to get that sauce down to three peppers. He told Matthew Odam how he works on it: never in a bad mood, always with Mana's Suenos Liquidos
playing.1 The kitchen's own statement of purpose is shorter. Suerte calls itself a restaurant driven by a passion for masa, an ingredient at the heart of Mexican cooking,
and signs off with hospitality prevails, homemade masa reigns.

Suerte mills that masa in the building. Odam rates it unsurpassed in the city, ground fine enough that the fried sopes cradling wagyu beef belly and chorizo arrive almost creamy.1 The corn behind it comes from Central Texas growers including Barton Springs Mill. That is a buying rule and not a default, because most heirloom-corn programs here import from Mexico.6
The room opened on East 6th in 2018, behind a heavy wooden door, in the old Dario's premises.26 Owner Sam Hellman-Mass was a founding partner of Odd Duck and Barley Swine. Nunez came in from Launderette, where he had been chef de cuisine, after La Condesa and Uchiko.6 The bar leans on agave spirits and rotating natural wine.5
Order this / avoid
- Order: the suadero tacos, confit wagyu brisket dressed with what the menu calls black magic oil, which the MICHELIN inspector names the house specialty. The oil is fermented black beans, chiles and fried garlic, cut with a spicy-tart sauce built from leftover chile parts and cilantro stems.236 Then the duck confit flautas for the mole, and the fried sopes for the masa.1
- Also: the tuna tiradito, diced bigeye and ripe avocado in a burnt habanero and apple broth, under candied red chile and a shard of yellow corn tostada.3
- Dessert: the Chocotaco. Executive pastry chef Derrick Flynn built it during the pandemic out of staff meals. He modeled the shell on Alex Stupak's fried masa tuiles, treating corn masa as a dough with sugar, cocoa and leaveners, then dehydrating the shells for a full day. Inside sits a semifreddo of egg yolk and mascarpone, cinnamon and a dark roasted peanut caramel.4
- Skip: the mushroom frito and the duck egg flan. Austin Monthly's 2018 review found the frito an indistinct mass tasting more of the fry than of mushroom, and the flan pleasantly rich but bland. That read is eight years old and I haven't found anything newer on either dish.6
- Avoid: stopping at the suadero. The MICHELIN inspector puts the vegetable-forward plates level with it, and the tlayuda with white bean aligot and wood-grilled wild mushrooms is the one that makes the case.3

The mole negro shrouding the crunchy duck confit flautas was the best I'd ever eaten in the United States. It was impossibly smooth, with subtle hints of chocolate and toasted seeds, no astringency, no overwhelming smoke or peppers.

The same guide calls the housemade Chocotaco one of Austin's best desserts.2 - Jolene M. Bouchon reviewed it for Austin Monthly in its opening year and was not uniformly kind. She called the goat rib barbacoa so tender it fell off the bone at the suggestion of a fork, and put the suadero over the top on the strength of the black magic oil. In the same piece the mushroom frito was
an indistinct mass that tasted more of a seasoned fry than of mushroom
, and the service on her first visit was poor before improving on her second.6 - Darcie Duttweiler went to the pastry kitchen for the Austin Chronicle in July 2026 and got Derrick Flynn's own account of the balancing act:

4 - The shelf, scoped: in the MICHELIN Guide Texas since the inaugural 2024 selection, carried without a distinction.3 Fermin Nunez was a James Beard Best Chef: Texas semifinalist in the 2024 cycle and did not advance. MICHELIN's 2025 Sommelier Award names Celia Pellegrini for Suerte and its sister Este together.8
Good to know
- Lucky Hour runs daily in the early evening, a sampling of spirits and snacks, and the name is the joke: suerte means luck. That is the pattern Austin Monthly recorded in 2018 and I haven't found a newer one.6
- The MICHELIN guide prices it $$$, and I haven't found a current menu price.3
- Hygiene: five routine inspections on the city register, 84 in February 2026, then 94, 86, 91 and 92 going back to July 2023. All sit far above the ordinance's failing line at 70, so there is no finding here; the newest is the lowest of the run and is recorded for trajectory.7
- Getting there: 1800 E 6th St, with a patio over the street.3
Verdict
must-visit — Book it. Order something that is mostly corn before you order something that is mostly meat, and let the wine floor pour.
