This started as a food truck in 2019 and the permanent room sits a few steps from the lot the truck stood on, which is the reason nothing about the menu changed when the walls went up.1 Margarito and Hayden Perez own it, and Jose R. Ralat reports for Texas Monthly that they came through a run of closures and immigration-status setbacks before this room opened.4 The cooking is where the argument is. Carnitas go into cazos, the traditional copper cauldrons, and come out with a touch of sweetness; the suadero is chopped rough and simmered in beef tallow.4 McCrary calls the fillings simple, familiar flavors executed with a precision he would expect at double the price, and rates the counter 9.1, fourteenth of the twenty-five best restaurants in Austin.3

- Order: suadero and carnitas the first time, on McCrary's own instruction. The suadero is at its best in the special suadero taco with salsa macha.4
- Order: a quesitaco, which is any taco with a layer of griddled cheese added for a dollar. Both the review and the al pastor guide tell you to do it.1
- Order: the torta if you have room. Griddled cheese, refried beans, grilled jalapeno and onion, a mix of Valentina's and mayo, on a toasted bolillo, which McCrary calls
a near-perfect torta.

- Note: "Landed in best new awards land 2025. Best al pastor tacos on Saturdays. Beware new taquerias 2026 statesman and Texas monthly". He was right about the Saturdays and this entry can now prove it: The Infatuation ranks the trompo al pastor here the best in the city and Ralat names Saturday as the day to come. The 2025 award still has no awarding body attached in anything read, so it stays here in his voice. The last clause was him telling himself to watch the 2026 Statesman and Texas Monthly new-taqueria roundups, and the Texas Monthly half of that reading list turned out to carry this taqueria.
