Ramen Tatsu-Ya (East Austin)
The tonkotsu comes four ways here, OG salt, shoyu, miso and spicy miso. Every bowl arrives with what The Infatuation calls one of the best ajitama it has had.1
Why go
The east-side shop opened in the summer of 2018, in the room Qui left behind on East Sixth.2 It runs the same broth as the rest of them, pork bones and fat cooked down until it is rich and silky. Tatsu Aikawa says that is a matter of hours you can taste.4 What it has that the others do not is a bar. This was the first Ramen Tatsu-Ya with a full cocktail menu, built by the group's beverage director Michael Phillips. It opened with late service at weekends.2 It is still the only one of the seven Austin doors serving after the rest have shut.5 The shell is the same A Parallel Architecture build as the other shops, with a mural by the Tokyo street artist ESOW. Aikawa's line on the move was short: We're super stoked to be opening a ramen shop on the east side. Come get your ramen trip on.

Order this / avoid
- The tonkotsu, in whichever of the four builds you want. OG for salt, then shoyu, miso or spicy miso.1
- The egg needs no ordering. Every bowl comes with one.1
- The Korokayy, a panko-fried disc of mashed potato and roast pork with a sweet, tangy katsu sauce to dip it in.1
- Avoid: coming here for barbecue. The smoked-meat rooms are Kemuri Tatsu-Ya on E 2nd Street and BBQ Ramen Tatsu-Ya at 2027 Anchor Lane. Both are separate premises with their own pits and their own menus.3

when the temperatures drop below 75 degrees or the faintest hint of precipitation finds its way into the air, roughly 85% of that population finds its way to one of the four Ramen Tatsu-Ya locations in town.
1 - The soundtrack is the founders' other career. Aikawa and Takuya Matsumoto met while both were working Austin clubs as DJs, and McCrary credits the playlist to a DJ turned ramen chef.13
Good to know
- Which door. 1600 E 6th St, the former Qui space. The operator calls this one East Austin and runs six other Tatsu-Ya premises in the city, including 1234 S Lamar, which is a different shop with its own record.52
- The queue is the cost. McCrary is explicit that the line is part of the deal and that it wraps the building on a cold night.1
- Hygiene: clean. Austin Public Health files this kitchen as Ramen Tatsu-Ya comal at 1600 E 6th St. Six routine inspections read 87 on 19 February 2026, then 94, 94, 82, 90 and 94 back to July 2023. The city's failing line is 70.6
- No price. Nobody publishes a menu price for this address.

should-visit — Walk in. This is the Tatsu-Ya to take when you want dinner to be an evening rather than a bowl and out.
