Hestia
Kevin Fink cooks almost the whole menu off a twenty-foot live-fire hearth, and what you taste of it is ash-aged chevre and hearth-roasted beets.14
Why go
The hearth is twenty feet long, fed by live fire, and The Infatuation says it touches almost everything on the menu at some point.
1 This is one of the few rooms in Austin where a collared shirt would not look strange.1 Emmer & Rye grades every ingredient it buys by how far it travelled, and the closest grade means a small farm inside a hundred-yard radius. Hestia runs its own version of that equation because it cooks over fire.6 The MICHELIN Guide gave it one star in the inaugural Texas selection, one of seven in Austin.54
Order this / avoid
- The scallop, grilled on the half shell, sliced and put back together, with jelly ribbons of beef tallow, soy and diced apple. The Infatuation calls it
easily one of our favorite dishes here.

- Pan de cristal.
The pan de cristal pairs a cracker-sharp crust with an inside so airy and cavernous that you can almost hear an echo as you break it open.
It comes with a smoked cream with habanada honey and a bitter pecan spread.1 - Wagyu bavette, and the caveat comes with it:
We've had a few times when the steaks have been undercooked or overseasoned, but when they nail it (and they usually do) they're among the best we've ever had.
The steaks arrive pre-sliced.1 - The kakigori to finish, layered rosemary and apple shaved ice with spiced honey ice cream, salted cream, matcha and white chocolate. Or the sourdough buttermilk ice cream under fermented tomato powder if you want the savory end.1
- Avoid the tasting menu. About a dozen courses just shy of $200, half of them single bites arriving twenty minutes apart, and the reviewer's own visit ran nearly four hours. Small plates from the a-la-carte side are the steer.1

- Hygiene: no finding. Austin Public Health scored the kitchen 80 on 20 February 2026, then 86, 88, 89 and 83 before that. Austin's failing line sits well below all of those.3
Verdict
must-visit — The tasting menu runs single bites twenty minutes apart and the same kitchen cooks better when nobody is pacing it, so the a-la-carte side is the buy. The scallop, the tartare and one steak between two is the table. If the booking site shows nothing, Fink says to phone the room, and he means it.
