Why go
Walk into Papercut at 908 E Fifth, find the small entryway at the back. You come out in a room of white-painted brick, exposed ducts and Japanese posters.1 The team behind Tare cooks it. The format here is looser: sushi priced by the piece, a few aguachiles and salads, and hot dogs on a roller behind the bar.1 The nigiri is the argument. About a dozen pieces run mostly dry-aged fish, and the toppings are salsa macha, mole and escabeche relish where the wasabi and soy would go.1 Those are chile-and-acid garnishes doing wasabi's job.1
Order this / avoid
- Order: the aguachile first, sashimi and grilled pineapple in a shallow pool of tangy, spicy broth. Then work through the nigiri.1
- Also: the egg salad sando, fancier and more substantial than the convenience-store sandwich it is named for. Then the hot dogs with caramelized onions and trout roe.1
- Avoid: the 90 dollar caviar swap on the hot dog. Nicolai McCrary's own suggestion is to buy six more hot dogs with the money.1

Good to know
- The whole food menu reaches every part of the building, so you can eat properly at the sushi counter or pick at it over cocktails out front.1
- Konbini trades behind Papercut at the same address, so getting in means walking through the cocktail bar.1
- Price: $$$$ on The Infatuation's band, with sushi priced by the piece. Nobody publishes menu prices.1
- Hygiene: no inspection score exists under either trading name. Austin's published inspections are running about eleven weeks behind their own fortnightly promise. This business opened in late 2025, so an empty result is not a clean inspection.3
- Souvenir: ask staff for a token for the toy machines on your way out.1

- Note: "Made water hit list 2026. Creat Tex Mex sushi!". The second half is right. The Infatuation's Austin Hit List does carry the place. Which list the first half means I have not worked out.
Verdict
should-visit — Nobody here takes a reservation and nobody publishes hours, so this is a late walk-in rather than a plan. Order two or three pieces before you commit to a run of them. McCrary's own caveat is the honest one: the salsa macha and the mole can bury the fish they sit on.
