Amanda Rockman spent more than twenty years in pastry before she opened this shop on East Cesar Chavez in October 2024. She writes the bakery's own copy in the first person.3 One lamination has to serve all three. She pipes the first and it stays soft, soaks the second and returns it to the oven, and bakes the third dry enough to shatter. She bakes the bagels in house and serves them with schmears including NYC cheesecake and French onion. The weekend brings a spiced pecan kouign-amann.2 Drinks run La Colombe coffee and nitro oat lattes on tap, and the Rockman Shandy comes out of Live Oak beer and housemade lemonade.2 Nicolai McCrary read the shop for The Infatuation in April 2025 and picked three things out of a giant glass case.1
