Yellow Bell Tacos
The brisket is as tender and rich as any we’ve had, but we can’t get enough of the rich, gamey lamb shoulder—shredded thin and paired with enough salsa, onions, and fresh cilantro to add some balance to an otherwise decadent meal.2
Why go
Texas Monthly's taco editor put this truck in The 50 Best Tacos in Texas in October 2024, and the taco he chose is the lamb.1 John Bates runs InterStellar BBQ and this is his taco truck. The fillings are InterStellar's smoked meats. The tortillas are house-made in beef tallow on the flour side and bought in from San Antonio Colonial on the corn side.1 It parks on the Austin Beerworks site up on Springdale, which is why the beer and the tacos are one stop.1
Order this / avoid
- The lamb taco, which is the one Texas Monthly named. Jose R. Ralat:
The juicy chopped lamb taco is smoky, but it doesn't mask the sweet, gamy flavors of the meat.
1 The Infatuation lands on the same order from a different angle:we can’t get enough of the rich, gamey lamb shoulder—shredded thin and paired with enough salsa, onions, and fresh cilantro to add some balance to an otherwise decadent meal.
2 - Brisket taco.
The brisket is as tender and rich as any we had
2 - Crispy dogs, a San Antonio classic, which the critic calls excellent here.2
What locals & experts say
- The Infatuation Austin leaves it unrated, and says on the page that the desk wants a re-visit before assigning a number. Bylined Nicolai McCrary, page dated 29 November 2023.2
- Nicolai McCrary on the brisket, verbatim:
The brisket is as tender and rich as any we had
. The comparison is against the other tacos on that run.2 - Texas Monthly, The 50 Best Tacos in Texas, October 2024. Jose R. Ralat is the magazine's taco editor and a two-time James Beard winner for his Tex-Mexplainer column. A statewide fifty is the strongest placement on this truck's record, and both desks converge on the lamb.1
Good to know
- No public inspection score exists for this venue, and that is a coverage gap rather than a clean result. Nothing about the kitchen is implied either way.3
- Hours, as published in October 2024: Thursday and Friday 5pm to 9pm, Saturday and Sunday noon to 9pm.1
- Check before you drive. Two sources put the truck at 10300 Springdale Rd, The Infatuation in November 2023 and Texas Monthly in October 2024, and neither is current. Trailers move.1
Verdict
should-visit — Texas Monthly put this truck in The 50 Best Tacos in Texas in October 2024 and picked the lamb, and The Infatuation independently picks the lamb shoulder too, which is about as clean a convergence as a trailer gets. The fillings are InterStellar BBQ's smoked meats because John Bates owns both, and the flour tortillas are made in house with beef tallow. Brisket the critic calls as tender and rich as any he had on that run, and crispy dogs on the side, a San Antonio thing. The Infatuation page is unrated pending a re-visit, so there is no number, and the trailer carries no public inspection score because Austin's register does not cover mobile vendors.
