Why go
Carlo Teodori and Francesca Sarra shut Via degli Aurunci on the evening of Sunday 9 August 2026, and said so themselves: "Farinè will close for good on Sunday 9 August in the evening." What they ran there was a pizzeria built on live sourdough and what they called agricultural flours, milled without additives or added gluten by the Azienda agricola Torre Colombaia at Marsciano, plus doughs raised on fruit ferments and left at least 48 hours in the fridge. Two formats came out of it, a 300 gram hand-stretched pizza and a 170 gram rolled one, on paper, with natural wine by the carafe. Sarah Cicolini named it in April 2025 for the research behind that dough and ordered the diavola, sixteen months before the door closed.

- Order: nothing here. The other pizzeria Cicolini named in the same interview, 180g Pizzeria Romana out in Centocelle, is open and does a marinara she says she cannot get enough of.

A working Roman chef sent people here in April 2025 and ordered the diavola. The owners shut it themselves in August 2026 and said so.
