Granny's runs out of a converted ambulance on East 7th, which tells you most of what the operation is.1 The dish that made it is the chilaquil taco, and Nicolai McCrary described the build for The Infatuation in March 2022: crispy corn chips in a fluffy flour tortilla get topped with a spicy and earthy house-made mole,
then cotija, onion and pickled jalapeno, with no egg anywhere.1 That is the interesting decision. Migas without egg is a texture dish rather than a breakfast dish, and the mole has to carry the whole thing. He rated it 7.9. That review is four years old now and it is still the only score anyone has published on this truck.

Verdict
could-visit — One good idea comes out of this ambulance. The chilaquil taco takes migas apart and rebuilds it without the egg, so crisp chips and a house mole carry a dish that usually leans on scramble, and The Infatuation put 7.9 on it. The trouble is the clock. That review is from March 2022 and nothing has been published since, so the number describes a truck four years ago. There is also a record problem worth knowing: the health register has a fixed Granny's Tacos premises in north Austin scoring in the nineties, and it is a different address from the East 7th truck, which has no public score at all because Austin does not publish mobile-vendor inspections. Give it a morning if you are on the east side.
