Why go
The menu opens like every other pizzeria in town, a few specialty pies, a build your own, slices by the piece, and then the topping list turns Texan: brisket ragu, brisket jam, beef pepperoni, tomato jam, truffle hot honey.12 The crust is sourdough, and the kitchen swaps in a gluten-free base at no extra charge, which almost nobody does.2 The meatball flight comes as one elk, one pork and one beef under melted mozzarella in a sweet, spicy marinara, with toasted focaccia to mop it.12 They dress the caesar with beef fat and finish it with spiced tomato oil.1 Nicolai McCrary wrote the place up for The Infatuation in July 2026 and said plainly in it that he and his colleagues have not eaten there yet.1
Order this / avoid
- The meatball flight, one each of elk, pork and beef, with the toasted focaccia. Add a dollar if you want the elk on a pizza instead.12
- A sourdough pie with beef pepperoni, jalapeños and truffle hot honey. That is McCrary's suggested build, offered as a suggestion rather than as a tasting note.1
- The lasagna pinwheels: brisket ragu, whipped ricotta, mozzarella and munster. McCrary picks them out of the card without having eaten them.21
- Cheap read of the kitchen: slices run $4.50 for cheese, $5 for pepperoni or vodka, $5.50 for whatever specialty is rotating.2
- Avoid: treating any of the above as a verdict. The Infatuation, the only publication that has written about this room, says it has not eaten here.1

Verdict
could-visit — The build is the whole case, because no published verdict on the eating exists. The kitchen bakes on sourdough, swaps a gluten-free crust in at no charge, and puts brisket ragu, brisket jam, beef pepperoni, truffle hot honey and tomato jam on the topping list, which is a Central Texas pizzeria taking the city's own meat seriously. The meatball flight runs one elk, one pork and one beef in a sweet spicy marinara with toasted focaccia, and the caesar is dressed with beef fat and spiced tomato oil. Slices go at $4.50 for cheese and $5.50 for the rotating specialty, so a cheap read of the place is available. The Infatuation put it in its New Openings and Hit List guides in July 2026 and said in the same breath that its writers have not eaten there, which is exactly where this sits: worth a look on the strength of what the kitchen is attempting, not on anybody's account of how it tastes.
