Pedroso's Pizza (Justin Ln)
Four doughs come off one counter: New York, American, Sicilian and a square-cut Grandma.1
Why go
Nicolai McCrary rates this counter 8.3 and the case he makes is about range rather than any one pie. Pedroso's is a pizza machine. We don't know any other place in Austin that can dish out textbook-ready versions of New York-, American-, Sicilian-, and grandma-style pies on a moment's notice as seamlessly as we would build a Lunchables pizza.
1 Four styles means four hydrations and four bake regimes, which is where most operations quietly drop to one house dough.
This is where the business ended up. The operator dates itself to 2020 and our little 12'x7' trailer located on Burnet road
, parked outside the bar Night Owl, and McCrary reviewed it there for the same outlet.32 That trailer is no longer among the doors the operator publishes; today it lists two storefronts, this one and a second on Airport Blvd in Cherrywood.5
Order this / avoid
- The Grandma.
This is our favorite of the styles at Pedroso's,
and the reviewer's advice is to take the square and build your own toppings on it.1 - The New York, for the sauce, cheese and basil, with one caveat from the review:
The ricotta on top is a little heavy for our liking.
1 - The American style if you want weight. The review's line on it is exact:
This feels like something you'd get from Domino's if the person behind the pizza tracker put just a little more tender loving care into each step.
1 - Avoid: treating it as a restaurant. There is no dining area at all.
What locals & experts say
- The Infatuation Austin, Nicolai McCrary, 29 August 2024, 8.3, printed against 2207 Justin Ln Suite D and filed under Brentwood: the four styles, textbook versions of each, on demand.1
- The same outlet on the trailer:
Not a lot of places can pull off as many pizza types as Pedroso's does, and the fact that they do it all so well out of a tiny trailer is an achievement that should be celebrated.
That page is about the Burnet Road lot, which is a different premises and is not among the doors the operator publishes. It prints no score I can read.2 - On the Airport Blvd branch the outlet has not eaten at, its own words:
We haven't been here yet, but want you to know this spot exists.

Good to know
- Which door: 2207 Justin Ln Suite D. Sunday to Thursday 11am to 10pm, Friday and Saturday to 11pm.5
- Where you actually eat it. The review is blunt:
There's no dedicated dining area (it's more of a counter-service takeout operation), so find a seat at the year-round Christmas-themed bar next door and eat pizza under a reindeer-drawn sleigh to help set the mood.
That bar is Lala's Little Nugget.1 - The other door: 3850 Airport Blvd in Cherrywood, Wednesday to Sunday, in the room Bobo's Snack Bar used to have.54
- Hygiene, and read this exactly as written: there is no public inspection score for Pedroso's at either address. Austin Public Health's register holds nothing under the name, and the permits at these two addresses belong to Lala's and to the former Bobo's Snack Bar. For a fixed counter that has traded for years that is an unexplained gap, not the mobile-vendor exemption the trailer had, and absence is not a clean bill.6
Verdict
should-visit — A counter in Crestview that runs four doughs properly, rated 8.3 by Nicolai McCrary, who calls it a pizza machine and picks the square-cut Grandma. Order at the window, then go next door to Lala's Little Nugget, a year-round Christmas bar, because there is nowhere here to sit. The trailer on Burnet Road that this listing started life as is not among the doors the operator publishes, and the same operator now runs a second storefront on Airport Blvd.
