The praise is about precision: sashimi plated like art, delicate nigiri, and inventive crudos with the splurge version under caviar.1 The most useful line in that review is the tip at the end. Stop deciphering the menu layout and ask chef Elvin Jin to recommend the best fish. That tells you how the counter works: the fish worth eating is whatever came in that day. Drinks are a short sake and wine list plus Japanese beer.1
