The Liberty
East Side King started in this backyard, on a menu you ordered by number: Thai chicken karaage, Poor Qui's pork belly buns, deep-fried beets in Japanese spice, liberty rice, fried Brussels sprouts.3
Why go
That was 2012, when CultureMap ranked the four East Side King trailers then trading and put the Liberty original on top, calling deep-fried chicken thighs with basil, cilantro and jalapeños the reason.3 Paul Qui was a James Beard winner and the Top Chef Texas winner at the time, and his food was being eaten at picnic tables behind a bar. Fourteen years on, every piece written about the bar describes an unnamed food truck in the same yard, so what the window is serving in 2026 is anybody's guess until you walk up to it. The bar itself opened in 2009, which makes it one of the oldest doors on East Sixth, from back when the neighbors were warehouses and auto shops.2
Order this / avoid
- Order: a drink at the bar and take it out back. The picnic tables are the room that matters, and there is a pool table inside if the yard is full.1
- Avoid: arriving hungry for East Side King. Its five-item Liberty menu is documented in 2012 and nothing read here carries it forward, so treat the trailer window as unknown until you see it.3
What locals & experts say
- The Infatuation, Adele Hazan, rates nothing here, because the outlet scores only places where you can eat a full meal. Her judgment stands anyway: the warehouses
have been replaced by condos, but it's still one of the best places to drink on the street.
She also describes the queue at the truck out back without naming it.1 - CultureMap's dive-bar round-up, September 2018, uses this bar as its example of how fast the street changed, and credits it with holding its ground:
among all that shine, The Liberty has managed to keep its grime.
2 - No published source names the trailer parked here now. The Infatuation's review and its East Side drinking guide both say only "the food truck out back". CultureMap wrote about the yard in 2012 and again in 2018 without naming anyone trading today. Austin Monthly has nothing on the bar at all. The Liberty's own website has been unreachable since its security certificate broke, so even the bar is not saying.
Good to know
- No website is recorded. CultureMap linked thelibertyaustin.com in 2018 and that domain no longer loads for anyone, so no website is recorded here.2
- What the yard holds: many picnic tables, a truck window with a line at it, and a bartender who will put your team on the TV if you ask.12
- Hygiene: clean. Austin Public Health registers the bar as
Liberty, The
, facility 10274853 at 1618 1/2 E 6th St, scoring 91 on 21 November 2025 and 91 on 20 September 2024. Nothing near the city's 70-point failing line. Any trailer in the yard is a mobile vendor and is permitted under a separate program whose scores are not published in this dataset, so no inspection record exists for the food here.4 - Hours: nobody publishes them, the bar included.
Verdict
could-visit — East Side King began in this backyard, and CultureMap's 2012 ranking of the four ESK trailers put the Liberty original first, on a five-item menu of Thai chicken karaage, Poor Qui's pork belly buns, deep-fried roasted beets under a Japanese spice blend, liberty rice and fried Brussels sprouts. That is history now, and no current account names the trailer in the yard today. What is current is the bar: open since 2009 and one of the oldest on the strip, pool inside, picnic tables and a truck line out back, and The Infatuation's Adele Hazan calling it one of the best places to drink on East Sixth. No published beer list exists.
