could-visit — The place one of the world's most decorated chefs takes his own brigade at 1am: kilos of river prawns and crab, live tanks, wok fire, open until 4, inside what Gaggan calls one of the last proper night markets in Bangkok. As cooking it is simple by his own description; as a late-night institution it fills a slot almost nothing else on the list can. If the night runs long, this is where it should end; nobody should restructure a day for it.
