Why go

Maple Leaf ran as a micro-bakery for years, moving through pop-ups and other people's cafe counters, and the croissant took the national title from The Edinburgh Butter Company in October 2024 (Sandweegies Magazine). The permanent counter opened in February 2026 at 16 Water Row, right at the Govan end of the bridge across to Partick. Four days a week, 8am until it runs out. What the reviews keep returning to is the snap, which is the honest test of laminated dough: if the butter layers were kept cold and the lamination held, the shell shatters rather than bends.

Order this / avoid

• Order: the ham, cheese and mustard pain suisse, which Peter Simpson called an expertly constructed piece of crunchy, flaky, fatty goodness1. A pain suisse is laminated dough around pastry cream, so a savoury one is a harder build than it looks. The almond croissant and the rhubarb and ginger danish both hold up, and the white chocolate and pistachio cookie was supremely buttery with just the right mix of crisp and chew.
• Avoid: a mid-afternoon plan. It shuts at 4pm and it sells out before that most days, and it does not open Monday to Wednesday.

Great pastries, excellent baking...with an impressive consistency. On the salted caramel brownie he was specific about the texture: extremely gooey and almost damp, but with a real snap to the base.1

• Timing: Thursday to Saturday 8am to 4pm, Sunday from 9am, as posted in March 2026. Closed Monday to Wednesday. It runs until sell-out, so early is better.
• Booking: none. Walk up and queue.

• Where: 16 Water Row, at the Govan side of the Govan-Partick bridge, which makes it a short walk from the West End on foot.

The shop opened at 16 Water Row in Govan in February 2026, beside the bridge to Partick, and Peter Simpson at The Skinny went in March and called it fantastic with impressive consistency. Pastries run GBP 3.20 to GBP 4.50, it is open four days a week from 8am, and it sells out. That is a bakery worth planning a morning around.
