Why go
Robuchon opened this room in the MGM Grand in 2005, and Johnathan L. Wright credits it with setting the standard other Las Vegas kitchens were then measured against and with training a generation of local cooks.1 The late chef was named the greatest of the twentieth century by the Gault Millau guide.1 Eleazar Villanueva runs the kitchen now, and Janna Karel says what he is judged on: his spectacular tight-rope act of preserving the Robuchon's recipes exactly while still innovating.
4 He was a James Beard finalist for Best Chef: Southwest in 2025.4 When MICHELIN first published a Las Vegas guide, this room took three stars and was the only one in the city ever to hold them. The guide came back in August 2026 and gave Joël Robuchon two. No other room in the four states the new guide covers has more.32

- Order: the degustation menu, which Karel describes as
part French grandiosity, part Asian refinement.

Verdict
should-visit — This is the room that held the only three Michelin stars Las Vegas ever had, and in August 2026 it took two in the guide's first Southwest selection, the only two-star in four states. Eleazar Villanueva cooks it now and was a Beard finalist in 2025 for holding Robuchon's recipes exactly while still moving them. Curtas, who has not been in years, still calls it one of the greatest restaurants in the world.
